Kluyveromyces marxianus is a yeast species with well-documented β-galactosidase (lactase) activity, making it scientifically relevant for supporting lactose intolerance. The enzyme β-galactosidase hydrolyzes lactose into glucose and galactose, sugars that can be easily absorbed by individuals with lactose intolerance. Several studies have demonstrated that K. marxianus can be used to ferment dairy products, effectively reducing their lactose content and making them more tolerable for those with lactose malabsorption (Zárate & López-Leiva, 1990; Silva-Santisteban et al., 2019). Furthermore, β-galactosidase from K. marxianus has been commercialized for use in the food industry to produce lactose-free milk products.

Clinical evidence for direct supplementation of live K. marxianus to treat lactose intolerance in humans is limited, but the enzymatic activity of the yeast and its use in food processing are well-established and supported by experimental data. Therefore, while there is strong scientific basis for its application in lactose hydrolysis and food technology, more studies are needed to fully validate its probiotic use in vivo for treating lactose intolerance symptoms. As such, the evidence is rated as 4 out of 5, with the caveat that most data supports its role in food processing rather than direct supplementation.
