Bovine liver has a long history of use in traditional medicine as a nutrient-dense food, and in recent decades, its nutritional profile has been the subject of scientific research. Bovine (beef) liver is rich in essential nutrients that support normal hepatic (liver) function, including high levels of vitamin A, B vitamins (especially B12 and folate), iron, copper, and choline. These nutrients are important for various liver processes such as detoxification, regeneration, and metabolism. Scientific studies have established that deficiencies in these nutrients can negatively impact liver health; for example, vitamin A and choline are critical for liver cell integrity and function, and iron is necessary for oxygen transport and energy metabolism in hepatic tissues.

However, there is limited direct clinical evidence that bovine liver supplementation (as a food or extract) treats or specifically supports diseased liver function in humans. Most scientific support comes from the recognition that bovine liver is an excellent source of nutrients required by the liver, rather than evidence that it has unique therapeutic effects beyond general nutrition. Some animal studies suggest that organ meats can help restore nutrient deficiencies related to liver damage, but robust human trials are lacking. Therefore, while there is a scientific rationale for using bovine liver to support general liver health, the evidence is moderate and primarily based on its nutritional content rather than direct intervention trials.
