Beef liver has a scientific basis for its use in supporting thyroid health and, by extension, in potentially helping to prevent or manage goiter. Goiter is most commonly caused by iodine deficiency, but deficiencies in other micronutrients, particularly selenium, vitamin A, and iron, can also contribute to thyroid dysfunction and goiter formation. Beef liver is a rich source of several nutrients important for thyroid health, including vitamin A, iron, and selenium. Iron deficiency has been shown to impair thyroid hormone synthesis and can exacerbate goiter in individuals with marginal iodine status. Additionally, vitamin A plays a role in regulating thyroid-stimulating hormone (TSH) and thyroid gland function.

While beef liver is not a direct source of iodine (the principal nutrient that prevents goiter), its micronutrient content may help address secondary causes of goiter or support overall thyroid function. Several studies have demonstrated that correcting iron and vitamin A deficiencies can reduce the risk or severity of goiter, especially in populations where these deficiencies are common.
