Amaranth, a pseudocereal belonging to the Amaranthaceae family, has garnered attention for its potential cardiovascular benefits, supported by both traditional use and scientific research. The seeds are rich in dietary fiber, proteins, unsaturated fatty acids, and phytochemicals such as squalene, tocotrienols, and phytosterols. Several animal and human studies have investigated amaranth’s lipid-lowering effects. Notably, consumption of amaranth oil has been shown to reduce total cholesterol, low-density lipoprotein (LDL) cholesterol, and triglycerides in both hyperlipidemic animal models and some human clinical trials. For example, a Russian clinical study found that patients with cardiovascular disease who consumed amaranth oil experienced significant reductions in cholesterol levels, suggesting a protective effect against atherosclerosis. The plant’s high content of squalene and unsaturated fats likely contributes to these benefits by improving lipid metabolism and reducing oxidative stress.
Despite promising findings, the quantity and scale of human trials are limited, and results are sometimes inconsistent. The evidence base is moderate (rated 3 out of 5), with more rigorous, large-scale clinical trials needed for conclusive recommendations. Nonetheless, there is a plausible scientific rationale for the cardiovascular benefits of amaranth, and its inclusion in heart-healthy diets is supported by its nutrient profile and preliminary outcomes in research.
